CINNAMON AND APPLE CUPCAKES

The days are getting shorter, the evenings are getting darker and everything is becoming slightly more festive..so with that all said, I've decided to bake some seasonal cupcakes!
There are two separate recipes here: one for the actual cupcakes and one for the icing.
 
For the cupcakes you will need:
  • 230g of plain flour
  • 155g of caster sugar
  • 125g of unsalted butter
  • 2tsp of baking soda/powder
  • 1tsp of ground cinnamon
  • 1tsp of vanilla extract
  • 1/8tsp of salt
  • 2 medium size eggs
  • 2 medium bramely cooking apples
Method:
  • Pre-heat the oven to 180°C
  • Add the butter and sugar to a bowl and mix until you have a light consistency
  • Add the eggs, vanilla extract and caster sugar and combine together
  • Add the flour, baking soda, cinnamon and salt and mix until everything is well combined
  • Core, peel and chop the apples to your desired size and place in a saucepan of water
  • Simmer for approximately 5 minutes, drain the water and leave to cool
  • Fold the apples into the cupcake mix
  • Bake for 30 minutes or until a knife comes out clean when inserted to the centre of the cupcake
 
For the icing you will need:
  • 100g of soft brown sugar
  • 250g of unsalted butter
  • 400g of icing sugar
  • 1tsp of vanilla extract
  • 1tsp of cinnamon
  • 2tsp of whole milk
Method:
  • Add the butter, brown sugar, cinnamon and vanilla extract to a bowl and mix until light and fluffy
  • Add the icing sugar, bit by bit while still mixing
  • Add the milk and continue to mix until the icing reaches a creamy consistency but is still firm enough to hold it's shape when piped onto the cupcakes
